Jane Lovett is an experienced cook and food stylist who lives in Northumberland. She’s taught at Leith’s School of Food and Wine, ran her own catering company in London and has tested and developed recipes for cookery books, magazines and TV programmes.

The second edition of her cookbook Make It Easy has just been published in paperback, and contains a lot of her favourite recipes. ‘Without a doubt the sea bass with butter beans and chorizo is one of my favourites,’ she says. ‘It’s such a quick supper from beginning to end. I’ve been told by so many people over the years how they absolutely love it: it’s become a family favourite. We have it about once a week because we have a fishmonger from Eyemouth that comes to our home every Thursday morning with a fabulous array of fresh fish.’

Jane demonstrated how quick and easy it is to make delicious dinners in our demo kitchen at the Living North Christmas Fair. ‘The first question I’m always asked at a demonstration when I start a new recipe is, “How far in advance can I prepare this?” so getting ahead is what I concentrate on because that’s what everybody seems to want,’ she says.

‘When a reader sees recipes in a book they think, “Oh, I can’t do that”, but actually when they see it demonstrated they realise how easy it is and it gives them the confidence to try. That’s what I want, to give people the confidence to have a go. It doesn’t matter if something goes wrong, unless it’s burnt to a cinder it’s pretty much always going to be edible. It’s worth just having a go!’
