
180g tuna loin
100g sesame seeds
100g chilli flakes
1 egg white
Selection of heritage tomatoes (at room temperature)
Wild garlic flowers
Extra virgin olive oil
Maldon sea salt and cracked black pepper
Place a pan on the heat to warm up. Add oil and season the tuna with salt and pepper. Gently sear the tuna for one minute then turn over for two to three minutes to cook. Remove from the pan and allow to cool.
Toast the sesame seeds and chilli flakes gently under a grill for one to two minutes. Brush the tuna loin with the egg white and place into the sesame and chilli flakes mixture to coat.
Slice up the heritage tomatoes however you desire, then gently dress with olive oil and season. Arrange on the plate. Slice the tuna and place onto the tomatoes. Finish off with wild garlic flowers and drizzle with olive oil.
