Here's the ginspiration you need for spring and summertime sipping...

From rosemary and lemon to rhubarb and honey, here are three refreshing cocktails to try.
ROSEMARY & HONEY BEES KNEES

ROSEMARY & HONEY BEES KNEES

Ingredients:

50ml Cotton Gin
25ml Lemon Juice
25ml Rosemary & Honey Syrup

Method:

1. Shake all ingredients together in a shaker full of ice.
2. Fine strain into a coupette or martini glass.
3. Garnish with a sprig of rosemary.

Rhubarb Sour

RHUBARB SOUR

Ingredients:

50ml Cotton Gin
25ml Lemon Juice (freshly squeezed)
12.5ml Rhubarb Syrup
½ Egg White

Method:

1. To make the sugar syrup, chop three sticks of rhubarb into small pieces.
2. Add to a pan with 200ml of water and 100g sugar.
3. Gently heat and keep on a low heat for 15–20 minutes (until the rhubarb has softened). Do not let it boil.
4. Pass through a fine strainer to remove the spent rhubarb.
5. Add all the ingredients to a shaker without ice. Shake together for 10 seconds.
6. Add ice to the shaker and shake hard for 15 more seconds.
7. Fine strain into a rocks glass filled with fresh ice. Garnish with a small rhubarb stick.

Top Tips:

  • Aquafaba (chickpea water) can be used in place of an egg white.
  • If shaken hard enough, you should have a nice foam
ROSEMARY GIN FIZZ

ROSEMARY GIN FIZZ

Ingredients:

50ml Cotton Gin
25ml Lemon Juice
25ml Rosemary and Honey Syrup
25ml Apple Juice (optional)
Soda Water

Method:

1. To make the Rosemary and Honey Syrup, gently heat 50ml of runny honey, 50ml water and five rosemary sprigs over a low heat for around 15 minutes. Do not let it boil.
2. Shake all ingredients (except soda water) in a shaker filled with ice.
3. Strain into a hi-ball glass full of ice and top with soda water. Garnish with a lemon peel twist and sprig of rosemary.
