Whole Roast Cinnamon Chicken with Rice
The whole chicken cooks over the rice, with the spices scenting both the chicken and the rice to create the most deliciously sticky chicken pilaf, a perfect accompaniment to the roast chicken itself.
Chicken and Chorizo
The chorizo is first rendered in the pan, with the fat then used to cook the chicken and sliced peppers. Heavy with paprika, the chorizo fat lends a vivid colour and powerful flavour to this dish, which is based on the Spanish dish of migas.
Chicken with Cannellini Beans, Tomatoes, Cream and Dijon Mustard
Chicken breasts work best for this recipe, though you can use thighs or legs instead. Cannellini beans are one of my favourite beans to cook with - a creamy canvas of flavour, the beans soaking up everything and all this recipe has to offer.
I've suggested you source some kombu for the ramen broth - it is an essential ramen ingredient and available in all Asian grocery stores and also online.
