This is the Ultimate Cobb Salad

For ease, you could cook your chicken in the air-fryer while you prepare the rest of the salad.

Ingredients
- 2 heads of Little Gem lettuce
- 4 strips of bacon
- A handful of feta cheese, crumbled
- 2 hard-boiled eggs
- 10–15 cherry tomatoes, halved
- 1 ripe avocado, diced
- 1–2 chicken breasts, marinated with:
- 1 tsp whole grain mustard
- 2 tbsp Honey Heaven Organic Acacia Honey
- Salt and pepper
- For the honey mustard dressing
- 1–2 tbsp whole grain mustard (to taste)
- 1 tbsp Acacia honey
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- Pinch of salt
Method
Preheat the air fryer to 180C and cook the marinated chicken breast for 13 minutes, or until fully cooked.
Grill the bacon until crisp, then chop into small pieces. Boil the eggs until hard, then peel and slice.
Prepare the vegetables: slice the lettuce, halve the cherry tomatoes, and cube the avocado.
To assemble the salad, create a base layer with the lettuce, top with the tomatoes, bacon, sliced chicken, eggs, avocado, and crumbled feta.
Whisk together all dressing ingredients and drizzle over the salad before serving.
