Vegan Crispy Topped Asparagus Mac and Cheese

Everyone’s favourite, Mac and cheese, is a must during the winter – and this vegan twist with delicious asparagus gives it a hearty (and healthy) boost.

So many glorious flavours and textures here: crunchy veg, crispy tofu and toasted cashews in the most delicious creamy spiced sauce. Can also be served with rice or noodles, or as it is.

Spiced Bhaji Naan Wraps

Pillowy naan breads are loaded with hot, spiced onion bhajis, minty yogurt and mango chutney. I like to throw in some shredded lettuce and coriander for crunch, too. It’s worth making these onion bhajis from scratch, as they are full of flavour (and easier to make than you’d think). They’re worthy of being the star of the show – instead of always the side dish!
