Everyone's favourite pub chef Tom Kerridge has gone back to doing what he does best in his new book Pub Kitchen, with more than 100 carefully chosen recipes that celebrate modern British pub grub for you to make and enjoy at home

Here he shares three of his favourites.

Prawn Cocktail with Bloody Mary Dressing

I have modernised this retro pub classic by introducing the spicy flavours of the much-loved Bloody Mary cocktail. Sharp and creamy, it offers the tiniest boozy kick with just the right amount of heat. All the components can be prepared ahead of time, then simply assembled when ready to serve.

Cheese, Potato and Onion Pies

These deeply satisfying pies are so utterly British. I use white onion in the filling because its sharp, pungent flavour holds its own well against the melty cheese and sliced potatoes. The ultimate comfort veggie meal.
