Yorkshire favourite Dan Toombs, aka The Curry Guy, has a new book out which combines his passion for spices with his love of cooking over coals. With new curry-style recipes which many of us wouldn’t have considered cooking on a barbecue before, he looks set to fire up everyone’s imagination this summer. Here he shares just three of his favourites.

How to Make Tandoori Grilled Calamari with Fresh Mango Chutney

This is most definitely beach grub! When I light up a grill by the sea, I like to cook seafood and lots of it. This grilled calamari recipe is really easy to whip up and can be enjoyed right off the skewer. I suggest getting a few plates, though, as the mango chutney with its savoury, sweet, spicy and sour flavours is the perfect accompaniment. Soaking the squid in milk overnight makes it really tender. Make this charred squid, pop open some wine and enjoy.

Get The Curry Guy's Recheado Fish Platter Recipe

The paste used in this recipe is ideal for stuffing fish, meat and vegetables but it can also be used as a marinade. Recheado masala is a Portuguese-inspired recipe from Goa, recheado meaning ‘stuffed’. It is much more common to fry recheado fish but I like to char it over the fire. If you would like to fry it, just cover the bottom of a frying pan with oil and fry over direct heat until cooked through and crispy on both sides.
