Simple Chicken Shawarma Skewers
These skewers are the perfect easy dinner - and you can even prep them in advance
- 2 tsp garlic purée
- 1 tbsp ground coriander
- 1 tsp ground cumin
- 2 tsp smoked paprika
- Juice of 1 lemon
- 4 tbsp olive oil
- 1 tsp salt
- 8 skinless and boneless chicken thighs, cut into chunks
Option 1: If making ahead for the fridge or freezer
Combine the garlic, coriander, cumin, smoked paprika, lemon juice, olive oil and salt in a large bowl and mix into a paste.
Add the chicken thighs and give it a good mix.
Add to a labelled freezer bag, seal and freeze flat.
For the oven
Remove from the freezer and leave to fully defrost. Preheat the grill, thread the chicken onto four skewers and cook for six to seven minutes on each side until the chicken is cooked through.
For the air fryer
Remove from the freezer and leave to fully defrost. Preheat the air fryer to 200C and thread the chicken onto four skewers. Cook for 10–12 minutes, turning halfway through, until the chicken is cooked through.
Option 2: If cooking now
Follow the method for ‘if making ahead’ until the end of step two.
For the oven
Preheat the grill, thread the chicken onto four skewers and cook for six to seven minutes on each side until the chicken is cooked through.
For the air fryer
Preheat the air fryer to 200C and thread the chicken onto four skewers. Cook for 10–12 minutes, turning halfway through, until the chicken is cooked through.
