Nothing says summer like tennis on the lawn - but if you're more about the spectating, we've got just the cocktails for you

From a classic G&T to fruity gin ice lollies, here's how to up your game this summer.


Cross Court Cocktail 

Serve up a celebration of summery British flavours with Eden Mill’s delicious Wildcard Gin, sweet strawberry syrup, raspberries and pink Prosecco. Start by pouring the gin and syrup, topping up with pink Prosecco for a delightful fizz.

Ingredients:

35ml Eden Mill Wildcard Gin
10ml Monin wild Strawberry syrup
Pink Prosecco
Raspberry 

Instructions:

Pour the gin and strawberry syrup into a champagne flute. Top up with pink Prosecco and stir, then garnish with the raspberry.


The Ace Cocktail 

Ace your cocktail-making skills with this easy yet delicious drink. Simply place all the ingredients in a suitable glass and garnish with strawberry, orange and mint for a delicious and refreshing cocktail.

Ingredients:

50ml Eden Mill Wildcard Gin
15ml Monin wild strawberry syrup
Topped with Fever Tree Raspberry & Orange Blossom soda
Strawberry, mint and orange slice for garnish

Instructions:

Build in an ice-filled highball or large wine glass. Garnish with the strawberry, mint and orange slice.


Wild Card G&T

You can’t go wrong with a simple but delicious gin and tonic. Eden Mill’s Wildcard Gin is complemented beautifully by a good quality tonic and fresh fruit, especially berries and a citrus fruit, like a lemon.

Ingredients:

50ml Eden Mill Wildcard Gin
Premium light tonic water
2-3 raspberries
1 strawberry, cut in half
Slice of lemon

Instructions:

Pour the gin into a highball glass, then fill with ice. Add the raspberries, then pour over the tonic water. 

Add the slice of lemon to garnish and finish by wedging the half strawberry on the rim of the glass.

Fruity G&T Ice Lollies

After trying these gin-infused lollies, you’ll never want a standard one again! Infused with Eden Mill’s Burgundy White Wine Cask Aged Gin, there’s refreshing flavours of lime, peach and raspberries to keep you cool all summer long.

Preparation time: 10 minutes, plus freezing time
Makes: 10

Ingredients:

500ml tonic water
60g caster sugar
100ml Eden Mill Burgundy White Wine Cask Aged Gin
3 limes, 1 juiced and zested, 2 thinly sliced
1 peach, finely sliced
20 raspberries

Instructions: 

Pour the tonic water into a large jug. Add the caster sugar and stir until fully dissolved and the tonic has lost its fizz. Stir in the gin, lime juice and zest.

 Push a couple of slices of peach and a slice of lime into each lolly mould, followed by a couple of raspberries. 

Divide the gin and tonic mixture between the moulds. 

Close the lids and push in the lolly sticks. 

Freeze until solid, preferably overnight. The lollies will last in the freezer for up to two months.
